Welcome to FTE ItsATruckThing.
What is the reason that you have to pull the battery cable off? To reset the computer? or to prevent the battery from going dead overnight?
You might want to go to your prefered auto shop and have them scan for codes.

Let's tackle one problem at a time.
Now when you turn the key to start the truck, all you get is one single click instead of the starter cranking the engine over?
Make absolutely sure that all the battery connections are properly cleaned and tightened.
This "one click" is not always a stuck starter.
Car repair Rule # 1...Is the battery good? (prove it).
Car repair rule # 2...Is the battery properly connected to the car? (check & clean all connections carefully).
Once that is done, you can move on to pulling codes etc, etc.

You lose very little power from a cat in good condition and they make high flow ones too. When you hollow out a cat you hurt the exhaust flow rather than helping it. The hot exhaust gases enter the empty cat and expand, as they expand they cool, hot gase flow better than cool gases. Also the pulses of exhaust tend to pull each other along and you lose the pulses in the empty cat.

Glad to hear you found the problem, that wire is very important.
