I have 265/75-16's on my 98 4x4 with no rubbing problems at all. Stock i had 235/70-16's. If you have an edge, you should be abe to fit 31x10.5x15's no problem.
As for the speedo recal.....you wouldn't have to recalibrate it, you'd just have to remember that is is off by about 7-8% or so. Mine is off by about 10%. I just keep it in the back of my mind that 50=55. Thats easier, and cheaper than a recal.
Also, if you are going to be buying truck tires, especially ones with a more aggressive tread, like mud-terrains, 15 inch wheels are the way to go. There are the most truck tires in that size. When you get up into the 16 inch tires and above, the number of AT and MT tires in those sizes drops dramatically. There are truck tires to fit those sizes, but they are maily "summer only" or "pavement only" tires.

20" wheels and larger tires
It has been about 6 months since I upgraded my wheels. I went from the stock Ford 245/75x16 to 265/50x20 and have really enjoyed the improvement in handling and general stability. The circumference of my new wheels is almost exactly that of my old wheels so the speedometer still registers accurately. I've had no problems and the only negative, if it can be called that, is to have the wheels balanced more frequently than with stock tires.

For choices in AT or MT tires 15" is really the norm for a truck.
Now if you are talking street or P rated tires instead of LT tires maybe that is not the case and you will have a larger selection in 16" and above.
Off road you want more side wall for flex against obstructions and the ability to 'air down' to below 20 PSI without damaging your tire.
