I am think of going from 16x8 to a 16x10 rim and I run 33" tires.
When I visited the Goodyear shop, I will told that the change of rim change will lower the height of the car. It doesn't sound fiesable but I wanted to ask people here what they think.

They are technically correct. Increasing the rim width will allow the tire to broaden- thus "lowering" the vehicle. However, the amount of lowering is so small, I don't think you would notice. I'd guess that there is less than 0.25" difference between an 8 & 10 inch rim.
But, if you are looking at 33" tires for 16" rims, then you'll probably have to get 285/75 (or therabouts). Most of the manufacturers recommend 16x8 rims for that size. The 10" wide rims may be too much.

I agree with NOMO, I have a set of 40x17x15 tires on 15x12 rims. The 40" tires only stand 37.5" tall. If I had a 15x10 rim, the tires would be 39" tall. This means the truck is 3/4 of an inch shorter than it would have been with a 15x10 rim(take the difference in tire size and divide by two).

A lot of this depends on the size of the tire. If the 33" tires you have are meant to work on both 8" and 10" wide wheels, the height change will be so minimal, you will not be able to tell a difference... if any.
The only time height will be affected is if you are pushing the evelope on the width. (e.g., putting a tire meant to mount on a 8" max wheel on a 10" or 12" wide wheel) Moving the bead width 2" is not going to change things (much). Tire pressures can make up for a lot (if not all) of this anyway.
We're really splitting hairs here. The only time a tire will 'cup' by moving the bead out... is when you move it beyond what it was desinged for.
