I'm not familar with the 2.3L but I would clean off all the oil so I could locate the exact location of the leak. Can you give more details about what you did when you changed the valve cover gasket, if you don't get everything very clean and use the proper gasket you could still have a leak there.

Not sure much about mazda or 2.3 liter motor. However, I would restress cleaning as much as you can off covers. Here are a few hints:
-Change oil, making sure not to over fill (My brother had a 2.0 liter chevy and we put 5 quarts in, when it only called for 3.5 quarts, oil slowly leaked)
-Check PCV value (should be located on top of one of the covers, not 100%). Should rattle when taken off and shaken.
-Make sure oil fill cap is securely tightened, the gasket could be cracked.
