There's been a handful of threads on upsizing tires and fitment in the wheel wells. With the stock 16X7, it is my understanding through recent threads here on FTE that you can go to a 285/75X16 fairly comfortably. I intend to do so when my current rubber (235/85X16 Michelin's) wear down. I intend to replace them with Bridgestone Revo's (min. load range D, possibly E) but on Eagle series 143 wheels, size 16X8. I'm more comfortable with the wider tire on a bit wider wheel (16X8 vs. 16X7), but that's just me!
BTW, I also have noticed that my supervisor at work has a 2001 F350 4X4 SD CC PSD with stock rims and 305/75X16's. He does quite a bit of traveling (hunting in CO, AZ; fishing throughout CA mountain terrain; etc) and has had no problems with load, wear, or rubbing... and he loads that camper shell down with gear and his buddies.
