Prime rib soup (sounds high brow, I know!)

Prime rib soup (sounds high brow, I know!)

After discovering how cheap prime rib is during the holidays and how easy it is to cook, it has become my meat of choice. My biggest issue has been what to do with the left over meat (and I don't mean the good part). Well, my wife has made prime rib soup twice now and it is delicious. She starts with the au jus and ribs in a big pot and add water and some chili powder to give it the right heat. After boiling out the bones, they are removed and the beef stock is completed. Next, the left over meat and mushrooms are added along with the rice (1/4 cup. Remember, the amount of rice you add determines if it is a soup or stew). After this simmers, fresh cabbage, bell peppers are added 5 minutes before serving. This dish is so tasty. Thought I would share.
