Sounds like the drum could be tweaked so you don't have to pull the hub just to check the brakes ...whatta pain.

I believe Ford and/or Dana did it this way to not only hold the drum on but also to make darn sure it was perfectly centered.

That thought crossed my mind, but then flywheels are not pressed on, they're bigger in diameter, and spin at least 3-4 times faster than the drums. Dang if I know their reasons.

Update, got new drums installed on the truck and WOW is my braking a lot better.
Question though, my brake pedal will return just fine but sometimes it won't return all the way up so I need to pull it up to turn the lights off.

I agree you need new shoes. Brakes are no place to be cheap or cut corners. New drums, cool.
Those hold downs can be a pita. Somewhere I still have a screwdriver I ground a groove into for installing them.

Check your brake pedal return spring. It my be stretched and in need of replacement. Either that or your brake light switch needs adjusting.

Might be way off but, power brakes? Some of the Ford cars of that era had a grease fitting on the linkage that few people knew about.

Check to make sure the emergency brake cables are free and not rusted stuck
Or that the mechanism that engages the emergency brake might be stuck in the brakes on position
Easy fix
Remove the mechanism and clea. It with a wire wheel the reassemble
