New fan clutch staying on

Got an 07 Harley Edition F250. I keep my scan gauge hooked up. Few days ago I noticed my FSS reading 0 and my fan was coming on and staying on. Time to change it. $300 later and a few busted knuckles getting shroud out and have new clutch installed. Today I noticed it came on and off a few times then it stayed on. Trucks stock except for blue spring upgrade, EGR delete (valve is still in and plugged in) STC and dummy plugs changed.
My engine temp is around 184-194. Running it hard yesterday I got to 205. Oil is roughly 5-8 deg higher. Tried turning ac off, tow mode on/off and it won't go off. At 205 it came on for 45 seconds, temp dropped and it went off. Now today it won't go off. My FSS is working again and giving me readings. 350-400 when off, depending on engine rpm up to 2800 when on.
Gonna go try to hide out condenser shortly as I heard high head pressure may kick it on. Temps in south La are around 90 degrees. Also all wires look good. HELP?!!

Do you have fan clutch duty cycle (FDC) as a PID?

No I don't. Only thing I have is TFC that I don't know what it's for. If you have the variables I can add it to my Scangauge II

It's strange. Truck sat for a few hours. I just got in it and clutch was immediately on. Stayed on for 5 mins the. Down to 550 rooms while driving. Ac on. Outside temp 91. Now water 190. Oil 197

It kicked back on and stayed on now. 182/186 water/oil

Anyone have the code for Fan Duty Cycle for Scangauge II for 6.0? The one I found doesn't work on 6.0

It staying locked in on restart isn't uncommon, if the truck turns off with it locked sometimes is stays locked in for a few minutes. Re-locking is unusual.

Texas thanks for the response. The FDC code doesn't work on 6.0. That's the one I programmed in. Went to get a snowball about 3 hours ago. Clutch stayed engaged until I got back onto my street. 10 mins there, left her running for 5 mins and 10 mins back. It was unlocked when I turned truck off. Just now I ran to Lowes. Clutch stayed engaged the entire time. My truck barely got up to temperature when I got back home and clutch was still on.
That's why I'd like to find out duty cycle to see if it's calling for it to engage or if it's sticking or even a defect. Does anyone know if I unplug it, will it default to on or off? That's something I thought about trying.
