Got just a few hours this evening, so only got a few things done.
The flashers on the left side weren't working, so I assumed it had to be something in the wiring for that side. After a bunch of YouTube videos on how a flasher relay is setup, and a bunch of testing, I finally tracked it back to a defective (despite being new) bulb in the rear, and an improperly grounded light housing in the front. After some rust clean-up + new hardware in the front, and a new bulb in the rear, I'm back in business.
And I guess that's what I get for assuming. I should always check the simple stuff first...
Also, I've been trying to figure out why the driver's side of the truck sits 1 1/2" lower than the passenger. On level ground, and jacks of equal height, the difference was within 1/8" - so I'm starting to think maybe the leaf springs on the driver's side are broken / worn out.
I think next it's time for the exhaust and to have a pro take a look at all the work I've done to make sure it looks OK.

The garage I took the truck to said the brakes, brake lines, fuel lines, etc. etc. all look good!
However, on the way there I noticed there was a good few inches of loose play in the steering (maybe steering box rebuild?), and I seem to have an electrical issue.
Upon closer investigation, it looks like the PO did some elements of the 6V - 12V conversion (like the battery), but left other elements undone (like the generator).
I guess I'll tackle that next...

The exhaust took a lot longer than I expected due to broken bolts on the manifold as well as really unclear routing. I ended up stopping with the straight pipe just in front of the passenger rear wheel.

Had to mess with the carb a little more to get it to stop leaking all the way. I think it's all good now.
I grabbed an optical tachometer on Amazon for $15, set the idle to 500 rpm, and then hooked up the vacuum gauge to set the idle mixture screw (19 in/Hg)
I noticed before disassembly that the choke was set to stay closed just a little bit when the choke was all the way in. With the idle adjusted properly, I was able to adjust the choke to be wide open as it should be.
I was then able to install the new regulator and the rebuilt generator.
Finally, I took the passenger side fender off, and started prepping it for the patch panel.

These seats sure don't look like originals, so I guess redoing the foam and covers myself is out of the question. I sent out a request for quote to three auto upholstery shops. Hopefully it's not too much $$....
- new parking lights installed and grounded
- new headlight bulbs installed - they both work!
- four new wheel cylinders installed
- seats and remaining interior removed (carpet, mouse nests, etc.)

I bought these extenders:

I'm a smaller guy, ~150lbs, so this works for me.
But even with the extenders, I wish I had a little more slack.

I must be blind. I can't see the extenders in the picture. I'm looking for the pieces you linked to on amazon.
I mounted the "spool" on that rib that runs along the back of the cab and around to the door jamb. I have plenty of extra belt. The problem for me is where it buckles. They aren't long enough to poke through the seat.
