Did you ever check the bellhousing inspection cover? that thing buzzes like crazy around 1800-2200RPM and can drive you nuts wondering what it is.

Did this just start happening out the blue? Or did it start gradually?

Checking at the o2 bung won't find it because the back pressure is between the 1st cat and the engine.

Unbolt your exhaust. Look inside with flashlight.

You'll see.
This thing is OBDI, O2 sensor is between the manifold and the catalyst

has the inspection cover been off all this time?

On my '01, when I did that and drove it around, the noise was HORRIBLE because the separator plate between the engine and bellhousing buzzed like mad.

The only other suggestion I have is to monitor the PCM with a scan tool that can do data capture and watch the knock sensor PIDs. The knock sensor logic, if I recall correctly only pulls 4 degrees of timing. So even if it is seeing something, it may not be able to do enough in an extreme case. But it will tell you if it at least sees something.

Unless I overlooked it my scanner doesn't show the timing advance/retard on this vehicle. was kind of shocked to find that it's a 2000 model with OBDI.

This thread sort of explains that:

My guess is a great big vacuum leak. Is this a stock vehicle, no mods at all? It would help everyone to know more about the vehicle you are working on and if your "2000 V10" is still in the same vehicle put it in.

Agreed, thanks for reporting the solution. And, for those of us lucky enough not to have had to change the knock sensor (yet), where exactly is it??
