Welcome to FTE! Did you replace thee clutch and pressure plate? A weak pressure plate will cause clutch chatter as will loose motor mounts.

Probably a warped flywheel. You could get it machined.

I'm guessing it shudders just as bad if you try to take off in second, or any other gear for that matter. Most likely you only noticed it in first and reverse as you are getting the weight of the truck moving from a standstill in those gears.

the flywheel was machined at the same time that we replaced the clutch and pressure plate, had not tried yet to take off in second,

How far does the pedal move before the clutch engages? You may need to adjust the clutch mechanism if you replaced the clutch and pressure plate.

If your clutch is all new, it may just need some "breaking in". Don't be afraid to rev it up and slip the beejeesus out of it. Then let it cool.

Bad motor mounts are another possibility.

the other posters are all more experienced than me, but one thing to check. i had a horrible chatter that was mostly cured when i replaced the tranny mount that had split into two pieces (top from the bottom). new clutch/pp, after some intentional clutch slipping it is almost gone entirely.

Assuming the mating surfaces were completely free of oil/grease from hands during assembly?
