Hopefully, that will take care of one problem.
Aaron is right about possible injector or hpop issues, but we just need look at one item at a time. On your next trip, take out the chip. You shouldn't need it on that light of a load. Then let us know how it behaves.

295/40/24 tire is only 33.2 inches tall shouldn't make much difference on ratio.
that's 1.3" over the 235/85/16 31.9"

Is your EBPV sticking? That could certainly put a lot of heat into the motor...

That figures out to just over 4% loss of driving force. Not too terrible.

Exhaust back pressure valve. It helps warm up by restricting the exhaust. I gutted mine same as many others have

Exhaust Back Pressure Valve. Looks like a choke on a carburetor. Its just before the down pipe on the turbo.

I dont think it would be sticking cuz it was putting out some smoke everytime it was struggling and when it downshifted

If it restricts the exhaust your turbo can't spool properly resulting in black smoke

It's a cheap check. Disconnect it and wire it open

If your temps are still high then it's not the problem

It's not the tire height it's the weight of the wheels that are robbing power and putting extra strain

But once there rolling you should have the momentum already I would think. Idk. To much physics here
