I'm gonna assume you are going to want to use an electronic ignition with this and not an old school points setup, if so just get a Ford DS2 distributor for a 302 and put the drive gear from the EFI distributor on it. And while the stock truck cam is pretty good it's going to limit power above 4500rpm so I'd suggest swapping in something more aggressive like one of the Ford alphabet cams.. E303 for example. And if you use an electric fuel pump then there is no need to change the timing cover.

IF your going with a 5sp manual then all you need to do is look for Mustang parts. The flywheel, bell housing and clutch all work with the engine you have. Did the RX7 use a cable or hydraulic clutch? The trans to use is the T5. It came in so many versions that you should be able to mix and match parts to fit it to almost any engine. I'm currently working on one that came in a Camaro but will be installing a tail housing from a Turbo Tbird to put the shifter in the correct location. It will end up in a Lotus Elite behind a Buick/Rover 3.5L V8. I also earlier used the T bird trans with a Chevy S10 tail housing to put a 2.3L Ford into an Opel GT.
The T5 did come with both a lever arm operated throw out bearing and a set up for a hydraulic one. Certain year Camaros has hydraulic set ups that bolted to the front of the trans and didn't use a slave cylinder to move a lever as some sets up do.
