t5 tranny

Yes. There was a whole "how to" out there in the interweb, but the link no longer works.
I was going to do that with my '85, but never got around to it.
Modern Driveline sells T5 related parts and adapters. (you may need a spacer/adapter due to input length)
TREMEC 5-speed 6-speed Transmission Conversion solutions Ford Mustang, Falcon, Cobra, Hotrod, GM Camaro, Chevelle Tri-5 Mopar Muscle
The T5 isn't going to put up with heavy loads. You should also consider what your gearing is, due to the first, reverse and OD ratios in the T5. If you have the dreaded 2.47 gears or even 3.25s, you may need to regear to be happy with a T5, especially with much of tire on top of tall gearing.

The truck will not be used for towing, outside maybe a small trailer here and there and certainly wont be done to it upper limit. The rear end will get a make over too...current plans are to swap in a 9" with 3:73, maybe 4:10 ratio and 17" to 18" tires, oh & remain 2 wd.
yes there is the Tremic, but the cost is a bit much. But I'll still check out the info.
Are all t5's with a OD?...Lookin for just a straight 5sp. With the i6 300 in front, I feel like the ratio drop into OD would be a bit harsh, even for the 300. Maybe not
It is the early planning stage so we are fretting out the possibilities.

T5s are all OD.
Ratios & other info:
Ford Mustang: Mustang Tech: Transmission and Drivetrain: Borg Warner T5 Transmission data
Background info, especially bell and clutch:
T5 Swap, T5 Conversion, Mustang T5 Swap, Auto to Manual Transmission - FordMuscle
If you are going to regear, you can tailor your final drive ratio to whatever trans you get. With the tall OD ratio in most T5s, your 4.10s would make 1st through 4th a breeze for your 300. The 300 isn't a screamer, but it's a lot quicker with a 2800 shift point vs. "pulling" from 1500. Doing your torque multiplication as far aft as possible makes life easier on the rest of the driveline.
Serving suggestions, of course...
