Pretty much my scangauge is just a carry over from when I had it in my 99 F150. I liked to know how well my truck was running during towing operations. The SC2 monitored the trans temp of the truck which seemed to get hot pretty quick.
In the F250, I have it mounted on the RVM for quick looks as I am driving. These days I will run the Water temp, Trans Temp, Volts, and Air intake temp. I will alternate the Air Intake with a mileage option real time or average. During towing, it's nice to have but since I know what to expect from the truck, I do not worry as much as I did with the F150 on long trips.

I had my SG for years.
Several in my past truck and almost 2 years in my F250.
I have the blendmount, with the extension cable that comes with the SG ran behind the headliner down the side post. I can unplug the cable from the truck data port and the other side from the extension cable tied up under the dash to use on another vehcile, should I need to read/clear a code.
It works as advertised.
I leave it displaying:
-Instant MPG (good for seeing the load on the engine while towing)
-AVG MPG
-trans temp
-DC Voltage
Also. works great for reading and clearing codes. Never got any in my F250, got some in my Titan and Murano....gas cap issues.

The ones most of us are talking about/ using are Scan Gauge II or 2. A few have an accessory called Blend Mount. I personally have mine a velco like product on my RVM. It was a cost difference of about 35 bucks! The tape, 6 foot black patch cord and Cat 5 coupler was about 13 bucks vs the Blendmount at around $50. Yes it looks nicer but I found my systems works just as well.

Here is a photo of where and how mine is mounted. I opted not to go with a Blend Mount and rather go with a piece of 3M double mount tape.
My truck is the 6.7 Diesel which explains the programmed gauges choices I have entered.
I run Exhaust Gas Temp on sensors number 1 and 4. The DIS, is distance since the last REGN Cycle. And the MPH is corrected actual MPH. Of course I have a number of other gauges that I have entered, these are just the ones that I run on a daily basis.
