I will get going down the road for about 30 miles or so and then my truck acts like it wants to die. So I press the clutch and tap the gas and it's fine.

It's happened twice and nothing is out of order as far as I can see.

 

Sounds like you got dirt in your carb, every so often it blocks the jet than on the rev it gets sucked through. Might want to open the top of the carb and clean her out.
