Which would be more beneficial?

I'm building up my 300 a little bit. Let me just start with my build.

Hedman headers to a dual exhaust.
Offenhauser C
Holley 390
Crower 19212

I am wondering if you guys would recommend I run oversize valves (1.94 and 1.60) on my 300 head, with a port and polish, or if you'd recommend I run my 240 head with factory valves and also a port and polish?

The reason it's one or the other is that to run oversize valves on a 240 head it would require quite a bit of unshrouding, essentially ruining any advantage to the smaller combustion chamber and potentially ruining flow.

So far I'm leaning toward the 300 head option, and then have that head shaved down a bit to get a bit more compression out of the thing. I'd just have to figure out how much can be shaved off as my pistons are factory and very likely do not have valve recessions cut in them.

Opinions? This is just for my F100 that I'd like some more pep out of. I'm not touching the bottom end.
