There aren't too many that are into these big mods that post here regularly. There are some, but you will get a lot more info on other forums such as Powerstroke army, etc. lots of big time modd'd trucks there. Sled pullers etc. plenty of 500hp + guys withs lots of opinions on s366 setups and more. Just what you are looking for.

Jason is using a S366 and really likes it. It is a step above a 38R and uses the T4 mount..what are your HP goals?? from reading your build it should be strong. With 238/100's and a S468 I put 532 on the dyno, currently using 300/200 and the 468 and should be 600+ and DD and tow a 10000 lb camper with out any issues..

I will have to disagree with that...Get with Matt at Full Force, he is running 350/200 (I believe) injectors,S468 turbo and Matt (Gearhead Tunes) and he tows with no issues.. He can also advise on the best injectors for the S366..

matt finally called me back He said 238/100 hybrids would be great said the tuning company could tune so that i didnt need a waste gate but if i wanted to gate it just spend the little bit more and run the s468

matt was a pretty awesome guy

Yes he is, I can tell you 238/100's and a non gated S468 with a 1.0 exhaust housing gave me 45 lbs boost @WOT and 532 hp on the dyno. The exhaust back pressure with that housing is not bad eather..Real fun to drive
I don't have the answer on the T500..

You could get some of your budget back by going with forged rods vs the cryo rods. Forged rods will hold 650 Hp and for all we know you might already have forged rods.
