The short version of the O2 sensor is it checks in the exhaust stream for incomplete combustion, and changes the air/fuel ratio accordingly. Since it messes with the amount of fuel provided, it can impact both millage and driveability.
With everything else I had forgotten about the 10 gals only fills.

Thanks for the video.
I'm a trained marine mechanic and don't throw parts at any repair.
I've had this truck since 2006.
I always put in the same amount of gas as I don't drive it that much.
Setting in the Fl.sun would expand it and dump it on the ground.
I know the mileage is about 8 maybe 7.
I was researching on other sites and heard the O2 sensor can affect the economy.
They're expensive and I won't spend $ on a WAG.(wild a%s guess)
I've got a scanner and I'll see there are any codes.

Is there a video on the canister and the valve system?

OK, so I moved this thread to the V10 forum, where a bunch of non-oil-burners will actually try to help

Not that anyone has been particularly evil so far, but the "wink wink nudge nudge" is not helpful to someone seeking help.

17mpg on a V10? Got it - been there, done that.

Can one of our BSEG brethren look at this thread and see if anything pops out?

I read all the posts and I'm sure the gas smell is coming from the canister, my 2000 V10 was starting to do that the last couple of years I had it. It didn't change the mileage just a little smell coming out of the canister, I sure it needed to be replaced. The mileage drop could be many things but if you don't get any codes I would look at the gas you are burning, we spent 3 winters in Florida and my mileage was always bad and the truck ran like crap. It never improved until we were further west and north and then it started running normally again and the mileage went back to normal. I always found my V10 to be very picky when it came to fuel.

Replaced the canister and the mileage went back up.

I know the OP's problem has been resolved, but figured I'd throw my two cents in. I've got an 01 E350 15-passenger van with the V10. Last year (summer time) I began to smell gas while idling the van (it is used as a mobile office). Couldn't find any leaks, but noticed that the rubber hoses linking the evap canister to the engine and the fuel tank were literally falling apart. They would crumble in your hand. Replacing all that tubing eliminated the fuel vapors. On my van, the evap can is in the very back, bolted to the frame.
