I think you and I have the same taste when it comes to old trucks. I love it.
I have checked my old front springs and I really think I would need some new ones. Have you gone the used parts way or have you ordered new ones? I was thinking about the new ones that midfifty has from Eaton springs with stock eye and poly buttons. They are supposed to give MAX 1 inch of drop.
My rear springs seems really nice, new eye bushings and some tender love and care will bring them back to glory, but the front once are heading towards garageart theme.
If you ever want to drive it in the snow I wouldn't lower it.

Ben, What would you know of driving in the snow in Austin , My lowered 55 worked great in the snow here in the the Sierras for years with studded tires on the rear and a little snow weight in the bed it would go everywhere. The front bumper pushed the white crap out of the way and it never got stuck. I eventually bought 4-wheel drives and don't need to drive it in the winter on bad days anymore.
I think going with the stock ride height is a great option. I like it when a truck looks like a truck.
Many lowered trucks are beautiful, but the stock stance just looks good.
Really the question is what do you like best. You need to be happy with it.
By the way, you are crazy. I think we all are. Why else are you restoring a nearly 60 year old truck.
LOL... I agree with (HARRIER) WE ARE CRAZY, every time I fix something on my 58 F250 something else breaks then I say "THIS IS CRAZY" LOL.... YES Stock Ride Height is a GREAT option and definitely you need to be the one who is happy with it
I think people traveling around countries locking for birds to take Photos of are crazey buth in the same time I figure that those guys/girls must think that I am crazy fooling around with 60 year old steel

I'm pleasantly surprised at how many here are fond of the stock look.
Now, I would still giggle like a little schoolgirl if I got to ride or gasp, even drive Homade, but that stock look does something for me.
This was after I removed two springs from each pack, before I tore the whole thing apart to rebuild. I just wanted to soften the ride a bit, and get a little more tire into the fenders because these tires are a little shorter than the original 16".
I also like the ''stock'' heighth. My new 56 will have the stock height and am now trying to decide what size tires to buy.
What is the new configuration for 6.70-15 in radials?
Here is mine with 235/60 on the front and 255/60 on the back. Just moved the 255 to the front and put 275/60 on the rear, but don't have a pic now. Maybe tomorrow.
