2011 Diesel Ehaust tip removal

Is there any reason that the factory exhaust tip on a diesel cannot be replaced with a regular stainless steel tip?

Other than the warranty implications written in the owner's manual, not really. You couldn't just replace it with a standard slip on style tip. The exhaust tip for a DPF equipped pickup is designed to siphon in cool air during the regeneration cycle to help cool the >1200 degree exhaust temperature. You could probably get away with it, but there are situations where not having the cooling effect on the exhaust during regen could be dangerous.

the previous owner of my truck put an MRBP dual stainless slip on cover of the stock tips

I did that on my 2012 250.... didn't have any adverse effects in over a year...

You could do a dpf back pipe, the pipes usually have some sort of cuts, or slots to mimic the factory tip for cooling.

Then you can add a regular, big ol tip onto that pipe.

It could burn a toddler or someone's legs if they were walk up close to the truck during regen. If you're in doubt, just stick your hand about 12" away and check it out like I did.

Yeah even with the factory tips post DPF is over 1,100°F so it can't be that cool by the time it reaches the tips.
It doesn't take long for it to do this to a piece of paper.
Plus, I couldn't hold my hands there for too long either.
