Currently running a ford 289 k edition. With a 4 speed borg warner. If money was no option, i would do a new 3.7 Nissan v6 with a nice turbo set up and nismo 6 speed. Matted with a nice independent suspension rear with 3.55s.. If money wasn't an option that is.... But since it is I'm happy with the 289in our 55.
I have never done it, but i will go stock, stroked, ram horn, mummert intake, all stainless hardware, stock yellow with a 3 on the tree with OD

The Lexus IFS with the lexus v8 seems an interesting option.
The reasons behind your ideas really help with direction,
Mine came fitted with a 327 Chevy. Still waiting to get it on the road. It does sound awesome so far and has plenty of potential I am sure. But if I had the choice, I would be sticking with a Ford engine. Probably something biggish.
I am so far pleased with the Chevy engine. Definitely not whingeing about a 327.
In my view only: Stock is stock. If you are going all original, then obviously all original is where it is at. But past that, all bets are off. Ford, Chevy whatever. Variety is the spice of life.
LS engines seem to be very popular right now for swaps. They are fairly cheap in junkyards, have a small footprint and weight for a small block, and make decent steam. It's probably the direction I am headed with my 55 F100.

I'd be frustrated but I'm looking at it as an opportunity.
I always regretted not putting a manual 5 speed in the truck.
I just have to figure out how to get the clutch in there - between steering & exhaust - not much room...

And if I could afford it I would have a Coyote in mine.
