BATCruiser is starting off with a positive reputation.
Is my thermostat stuck open?

I have a 2006 F350 6.0 and use the Torque OBD app on my Android tablet for my gauges. I haven't had a diesel truck before, so please excuse my ignorance . It was 45 degrees this morning and I went out for a drive in some foothills of NC. After 25 minutes of run time, (the last 15 at 55-60 mph) the highest the engine coolant temp got to was 183 degrees and went as low as 172 when going downhill. The engine oil temp ran between 183 and 191. As I understand it, the thermostat is not supposed to open until coolant temp hits 190. Is my thermostat stuck open?

I have had the same thing happen three times! Do not buy an aftermarket Thermostat! Go with the Motorcraft part. I learned my lesson the hard way! The thermostat is not hard to change. You will need to drain some coolant to get it down below the thermostat itself. Do a search on Thermostat Replace and you'll find some tips.

But in short, yup your thermostat needs to be replaced.

Yep, its stuck open. I had the same thing happen to mine too when I first bought the truck.

I just changed mine when I flushed the coolant and switched over to ELC. It is very easy, at least on the 2006 IIRC if you follow the thick upper radiator hose all the way down you'll see it connected right into it.

Part cost about $11 at the local Ford dealer.
