CAN Bus is one of the communications protocols used in the vehcile. https://en.wikipedia.org/wiki/CAN_bus It has nothing to do with the engine's torque curve.

Haven't seen a torque curve graph for a 3-valve V10... fishing around on Google, there's some European mandated CAN bus connection on trucks. I wonder if that's what they're looking for, as well as a torque curve. The mandated (since 2004) CAN connection is something called EOBD.
But beyond that, I can't help much more ...

Can bus is the connection between all the various modules or computers in the vehicle. All engine specs will be from the manufacture. Connecting to the OBD2 port is the connection to the can bus of sorts, they will not find specs there only fuel maps etc. so they basically don't know what they are talking about.
