Might not be a terrible idea to let DI do all of it if you can. DI is diesel innovations. David has been supporting the 7.3 since the beginning and does head porting, has a cam grind, and sells headers.
All the real headers are made by a third party company and resold by DI, swamps, etc.
Swamps also does some good ported heads and I think they might have a cam grind coming before long.
Iirc you were only wanting around 500hp? JMO if that's what your looking for, keep the heads and cam stock and just run 238/100s with the S468. That setup is good for over 500hp.

With stage 2s and a stock turbo you should be around 340-385hp depending on your hpop and fuel system.
So the goal is to make at least 500hp, if not more. In that case I might jump up to 250/200s. 238/100s should be enough to do 500-550hp. With 250/200s you should get a little closer to 600. That's up to you. Both are good injectors. The 200% nozzle might need a bit more tuning to get the smoke levels down, but they can be tamed for street driving.

OP, I feel it's necessary to tell you that when you get around that 600hp mark, the connecting rods become a weak link. Live tuning can help to keep it together, but it's kind of a game of chance at that point. Some trucks live for years and years at that level and some let go after just a few months. Pulling some timing and limiting the low end torque can help it live, but just know your going to be playing with fire if you jump up around that 600hp mark.

I haven't talked to Joey much about the T500 and I haven't run one on that size injector, but I would bet it will keep up. Call joey and ask him to be sure.
