Ball Joints and ....
I have a 2005 F-350 6.0 SuperCab 4x4 (Manual Hubs) with about 85,000 miles on the clock. Since it's going to need tires soon I'm planning on "rebuilding" the front end before I go for the tires.
I know that the ball joints are probably near the end of their useful life so I plan to change them.
Since I only want to do this once does it pay to replace the wheel bearing/hub assembly while I have it apart?
Tie rods or other steering bits I should replace while I'm there?
U-joints?

I would say yes,Replace the Tie Rods and U-joints as well as all the seals in the front end.I just did the whole front end on my 2000 at 99,000 miles but I repacked the hubs as they had no play in them.JMO but I look at it like this,Im there already and dont want to be back again any time soon.

I would concur with those who recommend replacing the bearing assembly. That's the weakest link in the front end. Seal replacement wouldn't be a bad idea either. Check and make sure the axle shaft ujoint is free and not sloppy as well. It's easier to replace axle shaft ujoints while you're doing the ball joints when it's apart. Ujoints aren't that costly.
