1979 F150/250s only came with 351M/400 (8 bolt valve covers like the other 335 class 351C). F350s had 460s. IDK if the F100 was available with a 302/351W (5 bolt Valve covers).
I asked for more information from the truck owner ...the motor isn't original to truck.....so I guess my question is can you tell from the block number if it is for a 302, a 351 or a 351W?

Hard to tell.
Ford built 3 different 351s, the 351W(indsor) which is the FE block of the 289/302. The 351C(leavland) which is the midsized 335 block and the 351M(odified) which is also a 335 block but has a higher deck and longer stroke.
The casting number wont tell you, only the type of block. You might be able to find the ID plates but that doesn't mean they weren't swapped and/or modified. The best way to tell is to pull the heads and start taking measurements.
The good news is that if you at least know which block it has you know which parts you need. The 289/302/351W parts should interchange. The 351C parts have some interchange with the 351M/400 except for the intake and exhaust manifolds.
Measure the flat surface where the intake meets the block. The 351w is wider than the 302 due to a taller deck height. If its like 7-1/4" then it's a 351w. Less than that and it's a 302.
A 351m will have exhaust manifold bolt pattern that is staggered, one side up the other side down for each port. Where as the 351w will have all the exhaust bolts all lined up in a straight row.
