To delete the EGR you will need a tuner. That same tuner then you can delete the DPF as well.
Without a tuner I would not delete anything. You will have more problems then you are trying to solve.
Pull the t stats and replace, then go from there.
Ensure you are using ford gold coolant or the napa equivilent that meets ford specs.

The DPF is the Diesel Particulate Filter. About 4 feet long under the right side of the truck passenger door. That is why the truck goes into a 'regen' mode. This traps all of the soot produced by the engine, and when it gets close to being full(or restricted) the computer turns on the 'regen' mode which sends raw fuel into the dpf where it is then ignited and 'reburns' the soot to clean it out.

No, you don't have to, but most recommend it. As far as the EGR, yes both need to be removed. And you will need a tuner to turn off the check engine light that will come on after you remove them.

It is probably not the oil cooler, I'm pretty sure the engine temp gauge is read from the coolant.
If you get a tuner, it can DISABLE the EGR, but you don't need to physically remove the EGR coolers.
The chances of the EGR coolers failing when you're not pushing hot exhuast through them is minimal IMHO.
When you're engine overheats, does the heat work perfect in the cab?
Depending on you're ability, and desire to tinker with a finnicky expensive engine, it might be a good idea to take it to the dealership.
