Good evening Rick and all who poked their heads in. It was a chilly night at work, but I was dressed for it. I had to close by myself tonight. At least it wasn't too busy.

Good early morning Rick, Pat and all who traipse through here. It was a decent day with a chilly night at work. But at least I had some help tonight. Made for a light evening for me. I could do some of the odds and ends that needed done. Came home and made some Hoppin Johns and biscuits with a side of corn for my supper.
Pat, Hoppin Johns is a rice and blacks eyed pea dish with pork chops. I use Zatarain's black-eyed peas and rice. I fry to pork chops in a touch of oil until you get that crispy edge. Then remove them, then add the rice mix as directed on the box. I also add a drained can of Bush's black-eyed peas and jalapenos. Slice an onion on top then top that with the pork chops, cover and simmer for 25 minutes. I like a side of corn cooked in butter. Some biscuit go well with it as well.
