Food for Thought and Consumption

Really for Consumption, a way of saying thanks for the help people have given me and or yourself. Pass along the idea, it's a way of saying thanks that everyone can eat up.

I'm starting with a very basic one;

3 large skinless/boneless chicken breasts
3-Tbs. Capers
1-tps. Fresh Dill chopped
4-Tbs. Lemon juice
3 to 4-Cups fresh Spinach chopped
¾ stick salted butter
1-Tbs. Adobo Lemon Pepper seasoning (Goya Brand)
3- Drops of liquid smoke

At low heat;
Place butter into a large black iron skillet allow to melt
Thrown in the rest of the ingredients except the chicken
Wait until the Spinach is partially welted then throw in the Chicken Breasts
Continue to cook a low heat until the chicken loses its pink color thru out. Done.
Steam some veggies, some white wine of choice……

Chicken Sate with spicy peanut sauce.

1) Cut chicken breast in 1" cubes. Marinate with Teriyaki sauce, ginger, garlic, lemon juice, wine, vinegar and peanut oil. Make chicek kabobs and cook over charcoal BBQ.

2) Finely chop 1-2 onions and sautee in hot saucepan. When onion starts to turn brown, throw in a tablespoon of ground chili paste and sautee another 30 seconds or so. Then add about a half a cup of peanut butter and allow it to melt at low temp while stirring. Next add water or coconut milk to thin sauce, and add brown sugar, lemon juice and balsamic vinegar to taste.

Usually served with fried rice.

Grilled Rueben Sandwich

2 slices of marble rye or pumpernickel bread
4-6 ounces of very thinly sliced corned beef
2 ounces of heated sauerkraut
2 tablespoons of Thousand Island dressing
2 slices of Swiss cheese, or any cheese of your tasting.

Spread some butter on each bread slice, one side only and spread the dressing on the opposite side.
To build:
Lay one slice of bread, butter side down in the skillet with the burner on medium heat.
Add 1 slice of cheese, add meat, add kraut, add cheese and top with the other slice of bread butter side up.

When the bottom slice is toasted and cheese begins to melt, gently flip the sandwich making sure to keep the goodies between the slices. Repeat toasting until the bottom is cooked and cheese is melted.

Enjoy the awesome treat with an ice cold soda or adult malt beverage and some chips.

The Ruben is my favorite sandwich. I like some honey mustard dressing on the side.

Pickled Garlic.

Get a jar of dill pickles.
Drain a portion of the "juice" into a small saucepan.
Prepare garlic cloves by peeling them (don't crush).
Heat pickle "juice" to where it just starts to boil.
Take "juice" off heat and dump in garlic cloves. Stir.
Let cool and pour clove/fluid mixture into a jar (with lid).
Let sit overnight. The longer it sits, the better.
Enjoy.
