The thing is, there are a couple ways to do this. I myself would change axle bearings, axle seals, pinion bearings, pinion seal, and carrier bearings in the rear as well as the mandatory fluid and cover gasket change. But you only NEED to change the gearset, fluid, and cover gasket.
On the front I would change the axle seals, axle bearings, axle joints, pinion and carrier bearings, and pinion seal as well as the gear set and fluid. But again you only NEED the gearset and fluid. (and also permatex to seal the diff housing to the traction beam)
I would probably do wheel bearings (associated seals)and ball joints on the front depending on how old they are and how hard you plan to mud the truck and what tire size you plan on running.

Yes are you sure about the rear Dana 44. It should have an 8.8 in it. If it had a D44 the speedo won't work as there is no VSS on a D44 to send a signal to the speedo. As for a locker, there should be a Detroit Locker, or an ARB, or a couple of Limited Slips for a D44 with 4.10 gears(or lower) that should work. And if it is an 8.8 there should also be several lockers available as there is no ratio break for Ford rearends.

It depends on the use and tire size. With a locker in the front you have to be gentle with 35" or bigger tires or you will start breaking stuff. What size tires are you running? you might need to think about just swapping the axles for 1-tons. If you keep the TTB I would stay with an open diff or get a limited slip in the front as it'll give an improvement in traction but won't totally lock the axles together so hopefully the LS will slip before something snaps, but don't count on that as a failsafe. Also look into hub fuses, basically a cheap thing that goes in the hub that's supposed to break before any of the more expensive stuff does.
