New oil cooler & EGR delete installed

Well not today but last weekend. Installed IPR EGR delete kit and new OEM Ford oil cooler.

Flushed coolant system before the tear down too.

There is a service with UPS that you sign up for that can make it so
you can reroute a package for delivery to you (if I understand it right)
at a different location/address.

There is, but you also have to pay for it. I haven't gotten around to signing up for that part yet.

Hmm,
Did not think you had to pay.
But then again it is linked to my account
with UPS and they may just push the bill
in with the rest or not.

Noticed my ECT and EOT sensors at cold start up are 2.6 degrees apart, I can't seem to figure out which one is not reading right, could be both. My guess is the ECT.

Swap them around and see if the readings change or remain the same. How long a cold soak are you giving them?

Compare those with your trans fluid temp. And iat2 after a cold soak they should all be pretty darn close to one another.

Following along and reading your woes with the 6.0, your comment above seriously made me bust out in laughter (with you, not at you). You seem to take it in good stride thank goodness for the truck's sake.
