The best source for informaton regarding the contents of the Ford Owner's Manual is the owner's manual itself. These trucks' capabilities are the subject of ongoing debate on FTE.
As to what is legal, private users are unlikely to run into legal problems regarding weight.
My two cents worth,
Steve

You think you're confused?
2002 F350 Dually, Rhino Liner, Edge Evolution (running in stock mode), 4" exhaust, 6.0 cooler
2010 F150 super cab, box stock, bed slide, ARE bed cover
Bigpipes 35. Correct. If by chance I will overload my Grosse Rear Axle Rating or 8800 of GVWR by towing it to a Cat scale, I ordered a Sherline trailer tongue scale. This way I can take just my truck to Cat scale & weigh both axles.
Then I'll use trailer tongue scale on the 5er pin. Then hopefully by adding Rear Axle weight to pin weight my GVWR & my Rear axle wont be over limit. I sure hope so.

Any ideas what the GCWR for my '65 F-350 dually should be?
The only specs I have on it is the door plate which shows GVW 10,000, and the service manual says front axle rating 3,800 lb, rear axle 7,200 lb. The truck weighs almost exactly 7,000 with me in it. (Not sure how much of that is on each axle though).
I currently have it registered with a "Year of Manufacture" (1965) 18K truck plate. (In MO the plates are for the combined weight). So with that plate I'd need to stay under 18,000 anyway. This is personal, non-commercial use.
I found decal on door jam & it lists Front GAWR 5200 lbs, Rear GAWR 6084 lbs, & GVWR 8800 lbs. I need to know what the trucks Gross Combined Weight Rating is to verify a 5er that shows 11,300 lbs. Thanks for any help.
Here is the link to Ford's 2004 towing guide. Gives you both max trailer weight and GCWR depending on you rear end ratio, cab and engine.

As a general statement (not directed at the OP) I just wouldn't want to be in the defendents chair because of a serious accident, whether caused by the driver or not, and have someone be able to say that you were overloaded based on Ford's reccomendations. Unlikely.....probably, but hard to argue numbers when they're in black and white and a lawyer is not going to use just DOT laws or stickers on trucks. Negligence is just that...negligence. Again unlikely scenario but even if you are the perfect driver and some bone head pulls out in front of you and you're overweight........
