I am not totally sure about what flywheel and clutch you would need to use,but the engine and transmission will bolt together fine. Are you going to use fuel injection on the 75 or are you going carbed? If you are going FI you will need to find a donor engine or a junkyard to steal the intake manifold and wiring off of,you will also need a 5.8 computer most likely. there are other things to consider,but this will give you a few things to ponder.

Should just need the corect flywheel for the '75 351. You may need a different pressure plate for the clutch, but wait till you get the proper flywheel and compare the mounting patern.
As for the F.I. if you plan on using factory stuff, the only real difference is Automatic versus manual transmissions. From the research I'm doinig on one of my own projects, the computers are the same for the 4.9, 5.0, and 5.8 engines. you just need to make sure which cam is in the engine to make sure the firing order and injector timing is correct. This can be an issue.

All 351/5.8 motors had a 28oz external imbalance so that part won't change, but there were two different sized flywheels used depending upon the starter position, a 157 and 164 tooth, so you'll need to know what you have.
EFI can be applied to and older motor.. the parts will bolt on no problem, the big issue is with the cam that has to be compatable with the early speed density system in your truck. There are several factory and aftermarket cams that are compatable and that won't kill the motors output potential, and the 5.0 and 5.8 motors were wired exactly the same so the only other thing you would need is a 5.8 computer for a manual or C6 transmission which would just plug right into the 5.0 wiring harness without any other changes. One final note, with the batch fired SD system the engine firing order doesn't matter, it's only the plug wires that have to be routed to match.
