Hello to you all!
I have just bought a '80 F100 Custom, the problem is that I am from Poland No parts here or any USA Ford models specialists.
I will rebuild the truck with a bit of tuning, so my first question is do any of you guys have a service manual?
I would like to kick out the system that is responsible for low emision, the one that takes some fumes from exhaust manifold and puts them back in intake manifold, is this possible? what to kick out?

You can find manuals on ebay. I believe you have another ebay over there, but just get on the regular ebay and you can find some. You might find brand new ones at Service Manuals, Owner Manuals, Wiring Diagrams, Service Bulletins - Helm Incorporated if they have them in stock.
Don't fall into the trap of wanting to take stuff off the engine, when you don't know what it does and what affect it has. The engine came out as a package, everything works together. I would not modify or remove anything from the engine.

The emission system you are talking about is the EGR (Exhaust Gas Recirculation). There is no benefit to removing this if it is working properly.
If you remove the EGR, you will go from a truck that runs fine on regular gas to one that pings and knocks even with premium gas. You will have to retard the timing, or re-jet the carburetor to make it run richer, or maybe both. This will reduce your gas mileage.
