For the final answer on how to set driveline angles refer to the Spicer driveline manual, from the people who invented the universal joint as we know it.

There may be some differences for a pure race car if the angles change a lot, might want less than ideal angles at rest so they are more ideal in hard use, but that's probably one of the few exceptions on driveline setup.
For normal stuff all the answers are in the Spicer manual.

3-6 degrees, but a little more is OK.
