You get more because the I-beam is mounted quite a ways from the spring, with the wheel close to the spring, sort of a cant, you get more lift than the spacer width, and requires camber correction due to the angle you created. This is the same for the old TTB axles in the 4x4 trucks, solid axles are what you're thinking about.
